  1. Begin by slicing the leek into thin rings, which should take about 5 minutes. Make sure to remove any damaged outer leaves.
  2. Wash the sliced leek rings thoroughly in a sieve under running water for about 2-3 minutes to remove dirt and sand.
  3. Open the can of mandarins and drain them in a sieve. This should take about 2 minutes to ensure the salad doesn't become too watery.
  4. Peel the apple, remove the core, and cut it into small pieces. This should take no longer than 5 minutes.
  5. In a large bowl, mix the leek, mandarins, and apple pieces. Gently stir everything to avoid crushing the pieces.
  6. For the dressing, mix the sour cream, crème fraîche, vinegar essence, and sugar in a separate bowl. Stir the mixture for about 1-2 minutes until smooth.
  7. Season the dressing with salt and pepper, which should take about 1 minute. Be careful not to over-season to keep the fruity flavor intact.
  8. Pour the dressing over the leek mixture and combine everything well. This should take about 2-3 minutes.
  9. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
