  • 2 large sweet potatoes (about 1.5 pounds total)

Instructions

  1. Preheat your oven to 200 degrees Celsius.
  2. Peel the sweet potatoes and cut them into even cubes (about 2.5 cm) to ensure even cooking.
  3. In a large bowl, combine the sweet potato cubes with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of paprika, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Make sure all pieces are well coated with the mixture.
  4. Spread the sweet potatoes evenly on a baking sheet and bake for about 20 minutes in the preheated oven until they are soft and lightly golden.
  5. While the sweet potatoes are baking, prepare the chicken. In a bowl, rub the chicken breasts with 1 tablespoon of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of smoked paprika, 1 teaspoon of salt, and ½ teaspoon of black pepper.
  6. After the first 20 minutes of the sweet potatoes, remove the baking sheet and place the seasoned chicken breasts on the sheet.
  7. Spread 1 cup of BBQ sauce evenly over the chicken breasts, ensuring they are well coated.
  8. Return the baking sheet to the oven and bake everything together for an additional 25-30 minutes, until the chicken reaches an internal temperature of 75 degrees Celsius and the sweet potatoes are soft.
  9. Once the chicken is done, remove the sheet from the oven and let it rest for 5 minutes before serving. This helps to retain the juices in the meat.
