Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (about 110°F or 43°C)
  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped
  • ½ cup grated Parmesan
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon Italian seasoning
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5-10 minutes until the mixture is foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center.
  3. Once the yeast mixture is foamy, pour it into the well in the flour and add the olive oil.
  4. Mix the ingredients with a wooden spoon or your hands until they come together into a rough dough.
  5. Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Make sure the dough is not too sticky; add more flour if necessary.
  6. Shape the dough into a ball and place it in a greased bowl. Turn to coat with oil. Cover with a kitchen towel or plastic wrap.
  7. Let the dough rise in a warm place for about 1 hour, until doubled in size.
  8. In a small bowl, mix together chopped garlic, grated Parmesan, parsley, rosemary, thyme, and Italian seasoning, and set aside.
  9. Gently punch down the risen dough and return it to a floured surface.
  10. Roll out the dough to about 12×18 inches and ½ inch thick.
  11. Spread the garlic-Parmesan-herb mixture evenly over the rolled-out dough, leaving a small border.
  12. Starting from a long side, tightly roll up the dough and pinch the seams to seal.
  13. Shape the roll into a spiral or coil, tucking the end underneath, and place it in a greased 9-inch round cake pan.
  14. Cover and let rise for another 30-45 minutes until the dough has risen.
  15. Preheat the oven to 375°F (190°C).
  16. After rising, brush the top with melted butter.
  17. Bake for 25-30 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.

Keywords: Make sure the water for the yeast is warm but not hot to avoid killing the yeast. You can substitute some of the all-purpose flour with whole wheat flour for a nuttier flavor. Freshly grated Parmesan is recommended for the best flavor.
