  • 1 large potato (peeled)
  • 1 onion (peeled)
  • 2 whole carrots (peeled)
  • Water to cover
  • Salt to taste
  • 1 cup breadcrumbs (add more if needed)
  • 1 cup chopped fresh parsley
  • 12 tsp paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Optional: chili flakes
  • Oil for shallow frying
  • Turkish rolls or pita
  • Yogurt-based sauce like tzatziki
  • Tomato slices
  • Onion and parsley mixture with sumac

Instructions

  1. Cook the lentils and vegetables: Place the lentils in a large pot and add the whole potato, onion, and carrots. Cover everything with water, add a pinch of salt, and bring to a boil. Reduce the heat and let it simmer for 25-30 minutes until everything is soft. You'll know it's done when the lentils break apart and the vegetables are soft.
  2. Mash everything: Drain any excess water if necessary, and mash the lentils and vegetables with a potato masher or fork in the pot until the mixture is mostly smooth but still slightly chunky. Be careful not to over-mash to maintain texture.
  3. Make the mixture: Transfer the mashed mixture to a bowl. Add the breadcrumbs, chopped parsley, paprika, cumin, salt, pepper, and optional chili flakes. Mix everything well until the mixture holds together. If it's too wet, add more breadcrumbs.
  4. Form the patties: Take a handful of the mixture and shape it into oval or square patties, pressing the mixture firmly with your hands. Ensure they are evenly thick for even cooking.
  5. Fry the patties: Heat oil in a pan over medium heat. Fry the patties for 4-5 minutes on each side or until golden brown and crispy. Carefully turn the patties to avoid breaking them. Be careful not to fry them too long, or they will become dry.
  6. Assemble the sandwiches: Slice the bread, add the sauce, tomato slices, the onion-parsley mixture, and 3-4 lentil patties. Optionally, you can also add grilled green peppers and pickles. Press lightly together and enjoy the sandwiches warm!
