Delicious Pumpkin Spice Magic Cookie Bars for Fall!

These Pumpkin Spice Magic Cookie Bars are a delightful blend of pumpkin and warm spices, perfect for autumn gatherings. With a crispy crust and a soft, chewy filling, they are sure to be a hit with everyone!

  • 1/2 cup butter
  • 1 14 oz can sweetened condensed milk
  • 1/3 cup pumpkin puree
  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon cloves
  • 1 cup sweetened shredded coconut
  • 1 cup chopped walnuts
  • 1 cup chocolate chips
  • 1 cup pumpkin spice chips

Instructions

  1. Preheat the oven to 175 degrees Celsius and grease a 9×13 inch baking pan or line it with aluminum foil.
  2. Melt the butter in a small saucepan over low heat until fully melted, about 2-3 minutes.
  3. Stir the Graham cracker crumbs into the melted butter until well combined. The mixture should be crumbly and moist.
  4. Press the Graham cracker mixture evenly into the bottom of the baking pan. Use the back of a spoon or your hands to form a firm crust.
  5. In a medium bowl, whisk together the sweetened condensed milk, pumpkin puree, cinnamon, nutmeg, and cloves for about 2 minutes until well mixed and creamy.
  6. Pour the pumpkin mixture evenly over the Graham cracker crust and spread it out with a spatula to ensure even coverage.
  7. Sprinkle the coconut, chopped walnuts, chocolate chips, and pumpkin spice chips evenly over the pumpkin mixture. Press the toppings lightly with your hands or a spatula so they don't fall off during baking.
  8. Bake the bars for 25 minutes until the top is golden brown and the filling looks set. You will notice a delicious aroma of spices in the kitchen.
  9. Allow the bars to cool completely before cutting them into squares. This will take at least 30 minutes for the best texture.
