  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (adjust based on the saltiness of feta)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sesame seeds (optional, for topping)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. If using fresh spinach, wash and roughly chop it. For frozen spinach, thaw it and squeeze out the excess water to prevent a soggy filling.
  3. In a large bowl, combine the chopped spinach, feta, ricotta, Parmesan, garlic, black pepper, salt, and red pepper flakes. Mix well until a homogeneous mixture forms.
  4. Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into about 6 equal rectangles.
  5. Place a tablespoon of the spinach-feta filling in the center of each rectangle, ensuring to leave enough space at the edges to seal the filling later.
  6. Fold the puff pastry rectangles diagonally in half to form triangles. Press the edges firmly with a fork to seal the filling inside.
