Delicious Chicken Stroganoff with Mushrooms and Sour Cream

  • 1 lb (450g) boneless, skinless chicken breasts, cut into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (preferably cremini or button mushrooms)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup chicken broth (low sodium)
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Wait 1-2 minutes until the oil is hot but not smoking.
  2. Add 1 medium onion, finely chopped, and sauté for 3-4 minutes until translucent and soft, stirring regularly to avoid burning.
  3. Add 2 minced garlic cloves and sauté for 1 minute until fragrant, ensuring the garlic does not burn.
  4. Add 1 lb (450g) of chicken cut into thin strips and cook for 5-7 minutes until no longer pink inside, allowing the chicken to brown slightly.
  5. Add 8 oz (225g) of sliced mushrooms to the skillet and cook for 4-5 minutes until they are soft and have released their moisture, stirring occasionally.
  6. Sprinkle 2 tablespoons of flour over the mixture and stir well. Let it cook for 1-2 minutes to reduce the flour taste.
  7. Pour in 1 cup of chicken broth (low sodium) and bring the mixture to a boil. Stir well to avoid lumps and let it simmer for 2-3 minutes until the sauce thickens slightly.
  8. Reduce the heat and add 1 cup of sour cream, 1 tablespoon of Worcestershire sauce, 1 tablespoon of Dijon mustard, and 1 teaspoon of dried thyme. Stir well and let it simmer for another 2-3 minutes.
  9. Season the sauce with salt and pepper to taste. Let it simmer for another 1-2 minutes, ensuring everything is well combined.
  10. Serve the Chicken Stroganoff over cooked egg noodles or rice and garnish with chopped fresh parsley. Enjoy your dish!
