These Mozzarella Pesto Breakfast Egg Muffins are a delightful way to start your day, combining creamy mozzarella, aromatic pesto, and fresh eggs. Perfect for a quick breakfast or snack, they are easy to prepare and can be customized to your taste.

Ingredients

Scale
  • 6 large eggs
  • 1/2 cup whole milk (or milk of choice)
  • 1/2 cup fresh basil pesto (store-bought or homemade)
  • 1 cup shredded mozzarella cheese (plus extra for topping if desired)
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup diced red onion
  • 1/2 cup cooked and crumbled breakfast sausage or bacon (optional)
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the muffin tin
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 180 degrees Celsius.
  2. Grease the muffin tin thoroughly with olive oil or cooking spray to prevent sticking.
  3. In a large bowl, whisk together the 6 eggs and 1/2 cup milk until well combined and slightly frothy.
  4. Add 1/2 cup basil pesto, 1 cup shredded mozzarella, 1/2 cup diced bell peppers, and 1/4 cup diced red onion to the egg mixture. Stir well until evenly distributed.
  5. If desired, add 1/2 cup cooked and crumbled breakfast sausage or bacon for extra flavor and protein.
  6. Season the mixture with salt and pepper to taste, being cautious with the salt as the pesto may already be salty.
  7. Evenly distribute the mixture into the prepared muffin tin, filling each cup about halfway to allow for rising.
  8. Bake the muffins in the preheated oven for 18-20 minutes or until golden brown and firm in the center. You can test for doneness with a toothpick; if it comes out clean, they are perfect.
  9. Let the muffins cool in the tin for a few minutes before gently removing them to maintain their shape and prevent cracking.
  10. You can garnish the muffins with fresh basil leaves if desired. Serve warm or allow to cool to room temperature before storing.
