Protein Pasta with Creamy Cottage Cheese

This delicious protein pasta dish combines the rich flavors of cottage cheese with nutritious protein noodles for a satisfying meal. It’s quick to prepare and packed with healthy ingredients that nourish your body.

  • 200g Protein noodles (e.g. made from chickpeas, lentils, or other protein-rich flours)
  • 250g cottage cheese
  • 1 teaspoon olive oil
  • 1 small onion, finely diced
  • 1 clove garlic, chopped
  • 100g baby spinach (optional)
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons grated Parmesan (optional)
  • Fresh herbs (e.g. basil or parsley) for garnish

Instructions

  1. Cook the protein noodles according to package instructions in a large pot of boiling salted water for about 8-10 minutes until al dente, stirring occasionally to prevent sticking.
  2. While the noodles are cooking, heat the olive oil in a pan over medium heat. Add the finely diced onion and sauté for 3-4 minutes until translucent.
  3. Add the chopped garlic to the onion and sauté for another 1-2 minutes until fragrant but not burnt. Be careful not to raise the heat too high.
  4. Once the noodles are done, drain them and add them to the pan with the onion and garlic. Stir well to combine.
  5. Now add the cottage cheese, paprika, salt, and pepper. If using baby spinach, add it as well. Gently mix everything together and heat over low for another 2-3 minutes until the spinach has wilted.
  6. Plate the dish and garnish with grated Parmesan and fresh herbs as desired. Serve warm and enjoy the perfect combination of flavor and nutrients.
