This delightful dish features fresh Brussels sprouts enveloped in a velvety cheese-mustard sauce, creating a unique flavor experience. Perfect for a cozy dinner, it’s quick to prepare and sure to impress even the skeptics.

Ingredients

Scale
  • 500 g fresh Brussels sprouts
  • 1 tablespoon butter or olive oil
  • 150 g cream cheese (plain or herb)
  • 100 ml vegetable broth
  • 1 tablespoon mustard (medium or Dijon, to taste)
  • 1 teaspoon honey or maple syrup (optional, for a sweet note)
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Prepare the Brussels sprouts: First, wash the fresh Brussels sprouts thoroughly. Remove the outer leaves and trim the stem ends. Halve larger sprouts to ensure even cooking.
  2. Blanch the Brussels sprouts: Bring lightly salted water to a boil in a large pot. Add the prepared Brussels sprouts and cook for about 8-10 minutes until they are tender-crisp. They should still offer slight resistance when pierced with a fork.
  3. Drain the Brussels sprouts: After cooking, drain the Brussels sprouts and set them aside. Be careful not to wait too long, or they will become too soft.
  4. Prepare the cheese-mustard sauce: In a medium-sized pan, heat the butter or olive oil over medium heat. Once the fat is hot, add the cream cheese and stir until melted and creamy.
  5. Stir in the vegetable broth: Gradually add the vegetable broth to the pan, stirring well. Ensure there are no lumps and the sauce becomes nice and creamy.
  6. Add mustard and honey: Stir in the mustard and optional honey to add a hint of sweetness. Season with salt and pepper, and let the sauce simmer briefly until it reaches the desired consistency.
  7. Combine Brussels sprouts with the sauce: Add the pre-cooked Brussels sprouts to the pan with the sauce and mix well, ensuring the sprouts are evenly coated. Let simmer on low heat for 2-3 minutes to meld the flavors.
  8. Serve: Serve the Brussels sprouts in cheese-mustard sauce in a bowl and garnish with freshly chopped parsley or chives. Enjoy immediately!

Keywords: For a richer flavor, you can use ricotta or cottage cheese instead of cream cheese. If you prefer a vegan option, substitute the cream cheese with a plant-based cream alternative and ensure the vegetable broth is free of animal products.
