Creamy Asparagus Soup with Potatoes – Enjoy Without Alcohol!

This creamy asparagus soup is a delightful homage to childhood memories, combining fresh asparagus and potatoes for a comforting dish. Perfect for a cozy evening, it offers a light and fresh flavor that everyone can enjoy.

  • 1 lb (450 g) green asparagus, trimmed and cut into 1-inch pieces
  • 1 lb (450 g) white asparagus, trimmed and cut into 1-inch pieces (optional)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced (about 1 cup)
  • 6 cups (1.5 liters) vegetable broth or chicken broth
  • 1 cup (240 ml) heavy cream
  • 4 tablespoons olive oil
  • 1 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper (to taste)
  • 1/4 teaspoon nutmeg (freshly grated, if possible)
  • Fresh chives or parsley, chopped (for garnish)
  • Lemon juice (to taste)

Instructions

  1. Preparation: Wash the asparagus thoroughly and cut it into 2.5 cm pieces. Peel the potatoes and dice them into small pieces. Finely chop the onion and garlic.
  2. Heat oil: In a large pot, heat 4 tablespoons of olive oil over medium heat. Make sure the oil is hot enough for the onions to cook evenly.
  3. Sauté onions and garlic: Add the chopped onion and sauté for about 5-7 minutes until translucent. Then add the garlic for another 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add vegetables: Add the cut asparagus and potatoes to the pot. Stir everything well and let it sauté for about 5 minutes to develop the flavors.
  5. Add broth: Pour the vegetable or chicken broth into the pot and bring the mixture to a boil. Reduce the heat and let the soup simmer for about 20 minutes until the vegetables are soft.
  6. Purée: Remove the soup from the heat and purée it with an immersion blender until creamy. If you don't have an immersion blender, you can also purée the soup in batches in a stand blender, being cautious as the soup is hot.
  7. Refine: Add the cream and stir well. Season the soup with salt, pepper, and freshly grated nutmeg. If desired, add a splash of lemon juice to enhance the flavors.
  8. Serve: Garnish the soup with fresh herbs like chives or parsley. Serve hot in bowls and enjoy the delicious, creamy asparagus soup!
